1794 The Whiskey Rebellion is a down to earth local eatery & whiskey bar based on Carlisle's unique history. Our menus contain food and drinks rich in American tradition.

Our food is simple and honest, created from ingredients sourced (locally when possible) from sustainable American farmers.

Our bar is based on the "farm to shaker" concept. Using the highest quality ingredients to pair with our small batch and locally distilled spirits & extensive whiskey list.

COVID-19 Precautions:
Our primary concern is the health and safety of our guests and staff. You will see that we are taking all precautions to ensure that you are safe while dining with us. All of our tables are 6 feet apart to allow for social distancing. At the bar we have glass dividers that give you a protective barrier from guests next to you. All of our servers, chefs and bartenders wear masks and gloves. Our employees wash hands and change gloves frequently. We are constantly sanitizing all touch points.

    We were greeted and quickly seated to our table upon arrival. Our server took our drink order fairly fast and gave us ample time to order. We ordered the Prime Rib in the 3 portion sizes offered - all medium cooked. One in our party ordered a Caesar Salad side, which was brought out quickly . Then the wait took place…a long wait before our entrees arrived. I ordered the King’s portion and it was the fattiest prime rib I ever saw - roughly 1/3 of my portion. Really disgusting. The flatware was of cheap quality and the knives were awful and dull. Not something one would expect from a steakhouse of sorts. All three of us had lots of fat in our portions and they were all undercooked - medium rare at best. When our server asked how things were, I mentioned the fat, and she sharply retorted, “our chef never trims the fat in house” and walked off. Because of the closeness to Christmas, I was generous with the tip, but honestly, they didn’t deserve it. This restaurant is one of those - close but no cigar - kind of joints. Could really be good, but misses the fine touches that make the difference. We won’t be going back.

    Took our college student out to celebrate his birthday. Our first time here did not disappoint! Received excellent suggestions and service from Victoria. Enjoyed cocktails and whiskey rings for appetizer. Wagyu steaks and medallions were fabulous. Great selection of sides.

    Underwhelming decor, server pleasant but took way too long to take our order. My son’s meal was microscopic.

    It was a beautiful night to sit outside and the outdoor dining was thankfully open. It was a little loud at times because of the traffic, but that didn't diminish from the atmosphere. We had the filet mignon and the Bastille medallions. Both were cooked to order and tasted delicious along with the sides. We also ordered the warm chocolate chip cookie with ice cream which was the perfect ending. The service was wonderful; the staff pleasant and accommodating. Our meals were on the more expensive end of the menu, but well worth the cost. We will definitely be returning.

    I will not be back .. the food was absolutely NOT worth the price .. waitress was friendly and sweet but disappeared a lot .. the food was ughhhh

    Just average. Would not return or recommend to others. For a place with “whiskey” in their name, pretty sad Old Fashioned. Steaks/Prime Rib were chewy. Service was on par with Chili’s or other chain. I’d rather go to Texas Roadhouse or Longhorn…

    We came here for a casual dinner for our 35th anniversary. We are glad we went. We were greeted and seated by a very sweet hostess (I am sorry I cannot recall her name). She mentioned our anniversary and made sure we got a complimentary dessert to go when we were too full to eat dessert after dinner. Our server, Victoria, was attentive and very nice. It was a Monday night so we ordered from the 20% discount steak menu. We ordered the filet and ribeye. They were done perfectly and were delicious. Our sides were mushrooms, hassleback potatoes and caesar salads. Everything was very good. We were given cheesecake to take with us since it was our anniversary. Overall, it was a very relaxing and nice evening in a very comfortable and casual atmosphere. The service and food were excellent. We would come back again and would recommend.
