Our inspiration is the Zeus Faber… John Dory, one of many local fish that can be fished sustainably and from our shores and although it has a wonderful Latin come Greek name it also has a very British name, John Dory. Faber is the Latin word for ‘Smith’ – Like a few other Latin occupational names (e.g. Agricola for farmer, Nauta for sailor). Smith being the most common name in English we decided it sits well with our name as we want to be accessible to all and give everyday people the opportunity to be part of our journey and own the business they work in.What sets us apart is our commitment to working with local fishmongers who run out to the coast each evening to collect day-boat fish and local ingredients. This means that everything on our menu is fresh, sustainably sourced, and supports the local economy.We believe in creating dishes that are not only delicious but also ethical and responsible.
