Zilla Sake, Portland’s pioneering sake bar, opened its doors in 2007 and swiftly became a cornerstone of the city’s vibrant sake culture. As Portland’s sake scene flourished, Zilla remained at the forefront, offering a meticulously curated selection of both popular and exclusive sake varieties, hand-picked by the owner. The summer of 2008 marked a pivotal moment with the introduction of Zilla’s sushi bar by head chef Kate Koo, transforming the venue into a high-end sushi destination steeped in tradition.
