In unserer kleinen Küche verwirklicht Udo Knörlein, der kochende Part unseres Zweiergespanns, seine kulinarischen Vorstellungen in einer wöchentlich wechselnden Karte. Sein Kochstil ist inspiriert von der französischen, aber auch der deutschen Küche. So findet man in seinen Gerichten oft Spuren seiner fränkischen Wurzeln. Aber auch die schweizerische Wahlheimat, in der er lange gelebt und gekocht hat findet sich immer mal wieder in einem Gericht wieder. Vom Brot über fermentiertes Gemüse und die Jus wird selbstgemacht was geht. Wichtig ist uns, dass eine kreative und nachhaltige Küche den Respekt zum Produkt auf dem Teller weiter trägt.Library...steht für unsere kleine Bibliothek an Kochbuchschätzen. Die Zahl der im Gastraum in Regalen und auf den Fensterbänken verteilten Bücher wächst stetig dreht sich im Moment aber um die 800.
