Our inspiration is the Zeus Faber, one of many local fish that can be fished sustainably and from our shores; although it has a wonderful Latin come Greek name, it also has a very British name - John Dory. Faber is the Latin word for ‘Smith’ and as Smith is the most common name in English, we decided it sits well with our ethos - we want to be accessible to all.Setting us apart from the rest is our commitment to working with local fishmongers who run out to the coast each evening to collect day-boat fish and local ingredients.
