Our inspiration is the Zeus Faber… John Dory, one of many local fish that can be fished sustainably and from our shores and although it has a wonderful Latin come Greek name it also has a very British name, John Dory. Faber is the Latin word for ‘Smith’ – Like a few other Latin occupational names (e.g. Agricola for farmer, Nauta for sailor). Smith being the most common name in English we decided it sits well with our name as we want to be accessible to all and give everyday people the opportunity to be part of our journey and own the business they work in.What sets us apart is our commitment to working with local fishmongers who run out to the coast each evening to collect day-boat fish and local ingredients. This means that everything on our menu is fresh, sustainably sourced, and supports the local economy.We believe in creating dishes that are not only delicious but also ethical and responsible.
Established in 1999 and proudly celebrating twenty years in Borough Market this year, fish! was the first restaurant of its kind in London. Our concept is simple – providing our customers with the best quality fish, cooked in front of you, in simple and classic ways. Since 1999 our focus has never changed, quality and responsible sourcing is still our main concern…we just look a bit more fancy now! Our central location in Borough Market means that London’s best produce is right on our doorstep. We are proud to say that we source most of our produce from Borough Market itself, and our fish is delivered daily from our very own fishmonger, Jarvis, which is renowned for its extensive range of the freshest fish and seafood. We're also winners at the National Fish & Chip awards too!

The Seafood Bar is located in the heart of Soho, London. We are a modern seafood restaurant that offers a wide range of the freshest seafood. It's our dream to provide our guests incredible seafood, and we're living that dream. The owner, Fons de Visscher was a respected fishmonger for 27 years in Helmond; a small city in the Netherlands, when he decided to start a new adventure. Driven by his passion for fish and great wines Fons created The Seafood Bar. The first restaurant opened its doors in 2012 in the Netherlands and now in 2021 we have opened our doors in London.From our fresh day boat Fish, Lobster's, Crab's, Oyster's to our larger than life seafood platters, all our food is sourced sustainably. We have immense respect for our environment, and do everything we can to sustain it.
This was a project born out of passion, by a few shellfish seafood lovers who wanted to bring with them that feeling of fulfillment you get from seafood restaurants from Continental Europe. Here at The Shell, we aim to bring you, the freshest and highest quality products straight from the producers and fishing boats for a very reasonable price to fulfill you seafood dreams.
