En el año 2015, Sylvestre Polanco abrió sus puertas en la antigua Casa Calderón, ubicada en Anatole France 74; calle con el nombre del autor de “El crimen de Sylvestre”, novela que nos serviría de inspiración para ponerle nombre a un restaurante de cortes argentinos cuya sinergia con la comida mexicana tradicional, se logra de manera única y especial.
