There’s a saying in Japan, ‘Ichi-go ichi-e,’ which means, every moment is one-of-a-kind and something to be treasured. This is the philosophy of our neighbourhood restaurant FUMI, located in the centre of Brighton. A slow restaurant in a fast-moving city, FUMI is a place where flavours, service and interiors are harmonious.A simple Japanese inspired menu driven by the seasons, our moods and by whatever is fresh and exciting in the moment. At FUMI, we source all our produce, meats and fish from small, local suppliers. Nothing is mass-produced or served out of season, with everything we create coming directly from the farm to your table. Each meal at FUMI is a celebration of bountiful harvests, beloved community, and our favourite pairing of food and friends. We hope you enjoy.
Dine in our blossom dining room or at our sushi cocktail bar Our mission is to provide pure, plant-powered meals that are good for your body. Our approach is knowledgeable, playful, and engaging. We offer a unique opportunity to experience a different way of eating vegetables and discover new flavours and textures. Talented chefs behind Food For Friends restaurant (established in 1981 as Brighton’s first vegetarian restaurant), Botanique (Hove’s exclusive plant based restaurant) and Wolfox Coffee have put together their experience and knowledge to bring you this new Asian inspired plant based concept. The result is a creative and colourful menu which shows organic plant-based food can lead to surprising, healthy and mindful new eating experiences. We believe in an upgraded casual dining experience in beautiful light-filled spaces dedicated to natural plant-based food and organic wines.
The excitement and anticipation that comes with growing vegetables, and creating innovative plates is translated to our guests through our menu. The plant to plate narrative is at the centre of what we do; our chefs show our local organic farmers a nod of respect towards the passion and patience required to grow a plant, in each dish they create. The seasons dictate our menu, with passion, flavour and creativity at the heart of the operation. This passion flows through our love of organic, and low intervention wines from small producers, carefully selected and paired with our food. Our very own indoor vertical farm is our most recent dedication to sustainable practices, allowing us to grow our own bespoke exotic herbs and aromatics for our hyper-seasonal food and cocktail menus, with zero food miles and incomparable flavour.
