David and Philippe Madamour often worked abroad before returning to set up restaurants in Paris. Today, drawing on these influences, they have been reinventing chic, casual dining at Restaurant Le Percolateur since November 2009. This “neo-bistro” with a “bistronomic” bent uses only the freshest produce and revisits the flavors of yesteryear to bring them up to date.
