Our executive chef, Nathan Bates, spent four and half years at the Michelin 3-Star "Fifth Floor" in San Francisco. We also offer cocktails courtesy of Jeffrey Morgenthaler and Benjamin "Banjo" Amberg.Our Italian and French-influenced menu changes monthly and highlights dishes Don grew up with as well as those he mastered though his experiences working at Michelin-starred restaurants all over the country.From Don: At Don’s, you may find gnocchi like my Ma used to make or Italian sausage modeled after my Godfather’s, Oreste “Ernie” Capone. You might also find scallops still in their shells, Oregon pork in the style of Braciole, and popovers I learned to make from my mother-in-law, Terry, because the Laurents family makes those every Christmas morning... beef tartare, sea urchin, caviar, etc too. Enjoy perfectly charred 28-day dry-aged ribeye, grilled octopus with chorizo, housemade piquillo pepper and pork empanadas, slow roasted lechon, refreshing ceviches and smoked bone marrow.Executive Chef Jaco Smith consistently pushes the boundaries on traditional Latin fare by incorporating wood-fired flavors into his cuisine while boasting a view of the Willamette River that few Portland restaurants can offer. Smith comes from a large family of cattle, sheep and grain farmers. He started cooking at a young age in his mother’s kitchen. His favorite childhood memories include the tastes of dulce de leche, flan and grilled breads, reminiscent of South American flavors and commonly found on South African kitchen tables.
