Eight years ago, Maximo Bistrot started as a restaurant for the thinking and execution of dishes from a wide range of techniques with the best of local ingredients; a warmful place that communicated our love for food. After a long and heartwarming road at our current location, we thought for the need of moving. Our new home, located at Alvaro Obregon 65 bis - a much wider space where gleams of natural light shine upon the surface-, is carefully assembled by Gabriela's meticulous look, and a kitchen built within Eduardo García's early memories, while living as an inmigrant in a barn in Ohio. Despite this big change, our principles initially founded remain the same: to offer food that distinguishes the best of local products.

We hebben hier geweldig gegeten! Ik kan me niet herinneren in welk ander restaurant ik ooit zo lekker heb gegeten. We kozen voor het 9-gangen tasting menu. Het eten was haute cuisine en veel gerechten hadden een Mexicaans element. De bediening was vriendelijk en kon goed Engels. We vonden wel dat het eten steeds erg snel werd opgediend. Wat ons betreft mag er meer tijd zitten tussen de gerechten. Maar ik denk dat dit een cultureel verschil is, aangezien we in Mexico merken dat de bediening altijd erg snel is. Ik denk dat dit in Mexico en de VS als iets positiefs wordt gezien. De wijnen waren ook lekker! We hebben een Oostenrijkse en een Mexicaanse wijn gedronken. Reken op circa 15 dollar per glas. Kortom, een geweldige ervaring!
