It is operated by the couple, Chef Juan Lopez Luna et sommelier and wine importer Lindsay Brennan. Alma offers a tasting menu experience (5 or 9 courses) inspired by the concept of "mar y montana", largely influenced by Chef Juan's childhood memories of central Mexico as well as the couple's time spent on the coastal region of Oaxaca. Lopez is one of the few chefs in Canada working with heritage corn from Mexico, making fresh masa in-house each morning and tortillas by hand with his grandmother's traditional tortilla press. The wine list specializes in sunshine-filled Catalan wines from a unique group of winemaker-friends from the Barcelona region.
