Modern market and dining concept highlighting the influence of Greek products on Mediterranean cuisine. Mediterranean cuisine is rooted in an archipelago of magical vistas but rocky soil; where folks that could grow little more than herbs and olives were compelled to build ships to trade what little their soil brought forth. The resulting market for herbs and olives used in food, medicine, ritual and cosmetics— created a network of Greek trading nodes that stretched across the Mediterranean and beyond. The spirit of this history lives on in the prominence of herbs and olives in tapas, cicchetti, meze and other small plate cultures of contemporary Mediterranean nations. Toku’s cuisine is predominantly Japanese with influences from China, Korea, and South East Asia. Ingredients and cooking techniques throughout the world create the Modern Asian menu. Owners Gillis and George Poll have dined all over the world, and have come across a variety of dishes that have really impressed them, “the best of the best.” According to Gillis, “We put together our favorites and added our own unique twists to them.” George emphasizes the menu’s ease and variety. “It’s a straightforward, casually written menu which allows you to dine any way that you’d like.” Guests may enjoy traditional meals with an appetizer, entree and dessert, or dine exclusively on sushi.
