Designated historical, 740 is one of Colorado's two oldest remaining saloons; transformed back to its 1904 roots; a traditional American dining saloon with a turn of the century ambiance featuring a magnificent room dominating bar, built in 1880 by the Brunswick Company,. The copper spit trough, once equipped with running water, still exists at the front of the bar. Louisville, notorious for its drinking, gambling, and illegal activities, evidence of the occasional misunderstanding is the .22 caliber bullet hole in the front bar. Owner Greg Carelli with help from his father Gene wanted to offer guests authentic Italian cuisine in a contemporary setting that features a large open flame fireplace, mosaic tiles, natural Birch woods, and warm lighting. An appetizer of fresh mozzarella and Beefsteak tomato caprese, lightly breaded calamari or lamb artichoke meatballs will please the palate at Carelli's. Guests can dine on baked jumbo shells stuffed with spinach and ricotta , the classic chicken parmigiana or shrimp scampi. Artisanal pizza, calzones, and paninis.
