Before the James Beard Award and the Gourmet Magazine review, Lotus of Siam was a small little hole in the wall located in Commercial Center in Las Vegas. How do you take a classic staple of American dining, the steakhouse, and break down the traditional thinking to create something entirely new and exciting?
