Salt's name comes its Salthill locale - which itself was derived from salt works that were once here - plus the nearby sea and, of course, the seasoning. Roly's Bistro first opened its doors in 1992 and has served traditional European cuisine ever since. Lunch is served in the Bistro on Wednesday to Sunday with Monday and Tuesday lunch being served in The Terrace Restaurant. Dinner is served in the Bistro seven evenings a week. We hadn't been there in a while and after our beautiful meal we will be revisiting soon. The restaurant was busy but we were looked after very well. The staff were extremely attentive. The food itself was gorgeous and it's no wonder the place was busy. Overall, we had a lovely meal and dining experience. Well recommended.
