Downstairs is the main bar where there is a stylish yet relaxed atmosphere in the rustic surroundings with the famous centre island bar being the main focal point. The bar creates a sociable ambiance where guests and bar staff interact since there is no wall or bar-back dividing them. The talented bar staff are literally on stage. At the front of the venue, guests can also enjoy Bohemia's tantalizing food sitting in the heart of the Lanes where tables and chairs sit on the cobbled streets.
In showing this building some love, local businesswoman Shoes Simes has said that she hopes to help make her pub more food-led and family-friendly. In doing so she hopes to turn this local building of historical importance into an establishment for local families and friends to enjoy together. It all started 13 years ago when she first saw the building and she knew straight away that this was the pub for her and finally her dreams have come true, with a full refurbishment, this pub is now ready to be revealed to Eastbourne in all its glory. Once functioning as an old Moot Court, eventually turning into a restaurant in the 1970s, before it boomed as a pub trading as The Rainbow. It eventually changed to The Counting House and saw a new lease of life as the garden grew to be a popular haunt of all in old town. We started Fatto a Mano in Brighton in 2015, serving authentic and affordable Neapolitan pizza, made with fresh ingredients, in a friendly environment. For us, everything starts with our dough. Soft and pillowy, our pizza dough is made fresh every day, using only the best Italian 00 flour, salt, water and yeast. We let our dough prove for at least 24 hours – the slow proving means we’re able to use minimal quantities of yeast, so our pizzas are light and easily digestible. We use carefully selected Italian and local British ingredients from a handful of small, independent suppliers to top our pizzas. Finally, our pizzaioli cook the pizzas in our oven at about 450 degrees, for no more than 90 seconds, in true Neapolitan style.
