Tuna tartare with alternating dollops of avocado purée and jalapeño sliver versus grand marnier aioli, topped with thin fried shallots. Chilean sea bass with fennel and capers in a light tomato sauce. Perfectly cooked medium rare lamb loin on a bed of basil infused potato purée. 2015 Philliponat blanc de noir champagne. Just a fantastic meal.
