Chef Wesley E. Choplin graduated from the prestigious Culinary Institute of America in Hyde Park, New York in 1997.

Chef Wes, as he is fondly known in the industry, has been a sought after chef from his early years at world renowned Pinehurst Golf & Country Club. He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.

With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service throughout North Carolina. Today, he is the Executive Chef and Owner of Choplin's Restaurant, a true institute, 14 years strong in the Lake Norman area which has gained popularity in the many surrounding cities.

    Choplins used to be one of my favorite steak restaurants. It is definitely not the same. Appears to be under new management and ownership. The food now was just ok at best. When my food arrived The waitress didn’t bring me a Steak knife and I had to wait about 5 minutes, while my steak got cold before someone else got it for me. Dessert was a small piece of $15 chocolate cake. In conclusion I will not be returning. Not worth the price.

    First-time guest, a family of four, took our son for his 18th birthday. We all ordered steak, and they were good. They were out of the BIG one (28oz) that my son wanted, but these things happen when you eat at places that provide fresh food. We had a lousy server, which made the evening not good, which is reflected in my low star rating. I do appreciate that management went over the top to make it right. They gave our son a $50 gift card to return and have a different experience. I would recommend eating there and making reservations, as the place was packed.

    I have 5 stars across the board except for how much you get for the price. If they gave up one forth more it would be a bad serving for the price. I believe we got 5 green beans on the plate maybe 4. i got the large salad and i thought it was small. can't image how small the small is. Service was outstanding, atmosphere was great.

    The owners are spectacular. We have always had an excellent meal at Choplins and they always have great service. Great dining experience!

    We recently celebrated my daughter’s college graduation dinner at Choplin’s with 30 of my friends and family, and it was nothing short of amazing! From start to finish, everything was perfect. The staff was incredibly attentive and supportive, making sure every detail was just right. The servers were professional, friendly, and went above and beyond to ensure our family had a wonderful experience. The food was absolutely delicious. Every dish was cooked to perfection and beautifully presented. The owner was so hospitable and truly made the evening special. She helped us with decorations, took the time to come in and greet everyone personally, and made us feel so welcome. The chef even came out to speak with us, which added such a personal touch. The ambiance was warm and inviting, and the spirit of the restaurant was filled with joy and celebration. My entire family had an amazing time, and we will always treasure this memorable evening. If you’re looking for a place to host a special event or simply enjoy an exceptional meal, Choplin’s is the place to go! Highly recommend! Again, thank you Faith, Sarah, and Jada for taking such good care of me, my friends and family.

    Steaks were ok, seemed a lower quality of meat than we usually have here. The steak flavor was just not as good as normal. Sides were good. The server was pleasant.

    Nice restaurant. I gave food four stars because it is limited for someone who is gluten-sensitive. Not a lot of options except for salad. Service (Jackson) was great. A bit pricier than comparable restaurants.
