El Xolo revolves around native corn and local products, drawing on over 8 years of research into the Salvadoran territory. We use ingredients sourced from indigenous communities across different regions of the country, cutting out intermediaries to connect directly with producers and create a direct impact on these communities.

We work in collaboration with various permaculture, biodynamic, and sustainable fishing projects, all in favor of the environment, which play a key role in the communities surrounding these initiatives, dignifying the work of their producers.

We are supported by Claudia Alfaro Moisa, Curator of the National Museum of Anthropology, Dr. David J. Guzmán, archaeologist and museologist.

Each creation reflects the rich tapestry of Salvadoran folklore, elevated to contemporary cuisine through both ancestral and modern techniques. Our tasting menu consists of seven courses, offering a rollercoaster of the beauty and wonders of our country. Pairing with wines and/or signature cocktails, available for an additional cost, enhances this experience, where each bite connects you with our roots and celebrates our presentation of the new Salvadoran cuisine. Amazing experience inspired by pre-Columbian food preparation and local ingredients. Servers were highly knowledgeable and the set course menu included details about El Salvador’s folklore, traditions, and history.

The restaurant’s location adds an extra layer of allure, surrounded by the rich cultural backdrop of the museum. The ambiance is thoughtfully curated, with decor that reflects the region’s heritage, making it the perfect spot for those seeking not only a meal but an immersive cultural experience. The menu at El Xolo features a variety of small plates, each showcasing the diversity and depth of Latin American cuisine. Though the portions are modest, the quality of the ingredients and the complexity of the flavors are undeniable. Every dish bursts with freshness, from perfectly grilled meats to vibrant ceviches and creative twists on classic Latin American comfort foods. The cocktails are another highlight, well-crafted and reasonably priced for the caliber of the drinks. They provide a great complement to the food, with many options highlighting local spirits and flavors. However, one downside is the steep price for water—at $7 for a 750ml bottle, it feels a bit excessive, especially given the otherwise reasonable pricing of food and drinks. It's a minor inconvenience in an otherwise stellar dining experience. Overall, El Xolo is a must-visit for food lovers, offering a memorable fusion of history, culture, and exquisite cuisine in one beautiful, traditional setting.

I went as a solo dinner and had the tasting menu. I really enjoyed every course, and the attention to detail, from ambiance to plating.

El Xolo es uno de mis restaurantes favoritos en El Salvador. La atención del staff es fina y verdaderamente te hacen sentir como en casa. Los alimentos me sorprenden siempre, el sabor explota en el paladar con cada bocado. Recomiendo ampliamente visitarlos y vivir una gran experiencia culinaria.

Food was great. As were the drinks. Service was mostly great except some dishes came a bit out order and when we ordered two of the same dish (we were a big group) one came much later than the other. Obviously kitchen was a bit not on top of the planning. One major complaint was the lighting. There were some small spots about our table and one was flickering. There was no dimming option. Either very bright or off. Just made the ambiance a bit odd for a high end place overall. But as stated, food and overall service staff were very good.
