Glass Brasserie is an eloquent, lofty restaurant and wine bar with panoramic views overlooking Sydney's historic Queen Victoria Building. Under the culinary guidance of head chef Natalie Murphy, the Glass team dreams up honest, simple culinary experiences that celebrate the finest seasonal produce in imbued flavour.

The brasserie-style menu is designed to take guests on a journey, losing themselves in the enclaves of the restaurant's ambiance, flavours and character. Glass boasts one of Sydney's most comprehensive wine lists, curated by Head Sommelier, Mauro Bortolato for almost two decades. The 3,500 strong collection is encased in a striking wine wall that spans floor to ceiling through the space. Designed by renowned interior designer, Tony Chi, the restaurant's interior exudes equal party's intimacy and grandeur with it's ambient open-plan kitchen and expansive day-to-night dining experiences.

    The salmon gravalax was a stand out and the ambience was lovely. We enjoyed ourselves very much.

    High level of service and skilled execution as would be expected from Hilton. Ambience was great with some fab modern jazz sounds not too loud. Food was delicious and skilled sommelier supported selection of perfect beverage. Attentive service without being overbearing. perfectly timed to meet our need to get to a show, without feeling rushed. We’re planning to head back for the banquet in future

    Absolutely Outstanding! From the moment we walked in, we were greeted with warm hospitality and a fantastic atmosphere. The food was nothing short of exceptional—every dish was beautifully presented and bursting with flavor. The service was top-notch, with attentive and friendly staff who made sure we had everything we needed. The attention to detail, from the ambiance to the perfectly curated menu, made for an unforgettable dining experience. I would highly recommend this place to anyone looking for a top-tier meal. Can’t wait to come back!

    We were staying at the Hilton Sydney and on the first night did not feel like venturing out too far. We booked Glass and glad we did. Restaurant has nice views at some of the tables (ours did) and food was excellent, service was solid and restaurant had a nice atmosphere. We can highly recommend glass, especially if you are staying at the Sydney Hilton.
