James Beard Award-winning Chef Andrew Black makes his way back to Skirvin Hotel to open his newest restaurant concept, Perle Mesta. The restaurant will be his first concept to open since winning a James Beard award as 2023’s Best Chef Southwest and will be located on the first floor of the historic Skirvin Hotel (One Park Avenue, Oklahoma City). Perle Mesta will offer breakfast, lunch, and dinner service and the cuisine will reflect Chef Black’s continued exploration of what he calls “possibility cuisine,” a concept he attributes to his style of cooking that explores and embraces the endless possibilities of ingredients, flavors, techniques, and cultural influences. In this context, possibility cuisine involves chefs pushing the boundaries of traditional cooking and experimenting with unconventional ingredients, fusion cuisine, molecular gastronomy, or avant-garde techniques. It may involve a sense of creativity, innovation, and openness to exploring new culinary horizons.

This is an absolutely unappreciated restaurant. The decor is gorgeous, the service impeccable, and the food delicious. My only regret is that we did not discover it earlier. We will definitely be back as I want to try everything on the menu.

The service was slow. this wasn’t to do with the wait staff we didn’t think because the Dining room all had the issue. We think there were at least 2 private parties that maybe contributed to that. The food was great though! on a side note, I heard the story behind the the name of the restaurant or rather who it was named after on a CBS story this morning . It’s a great story, I’m surprised they don’t mention it or if they did, we never saw it.

The food was excellent! Great service! There was a large group and. They were very noisy….found it disruptive. Chef Black needs a pastry chef!! Offering a single option for dessert is very disappointing. Expected more.

Food was excellent but it took 45 min for the food it to be delivered to our table. Excuse was they had a new chef who was still learning the menu.

Everyone enjoyed their time overall, but the experience wasn’t what I would expect from a restaurant at this price point or caliber. I called the previous week to schedule tea service, but I wasn’t informed of the 48hr notification period. The woman who helped with my reservation didn’t mention that we would have to set it up on their website. She said I could just book via open table. We decided to do brunch instead as it would be an hour to prepare a high tea. Upon arrival, there was no one at the front desk and some patrons who had already been seated had to get up to retrieve their own menus. The service was slow. My meal came about 10 minutes after everyone else’s and it wasn’t anything special. I loved the environment but they don’t quite have the formula down. The manager was prompt and offered a discount, but I don’t know that we will be back anytime soon.

Excellent service. Beautiful ambiance. The food was amazing! We ordered the baby scallops, the venison and the sea bass. Delicious! We felt it was a little expensive but overall a great experience!

This was the second time we have been there in the past two weeks. The food is exceptional! Both times we took out of town guests who were very impressed. However, there were hitches in the service this time unlike the flawless service before. Delayed delivery or in the case of water at the table totally forgotten to serve all guests. Then they were totally out of the wagyu beef, ice cream, and one of the wines that is on their “by the glass “ basis menu. Our guests also wanted a broader selection of beer than the 3 listed. We are hopeful that these absences are due to high demand for items and not lack of attention to keeping basic items fully stocked.

Really nice atmosphere and excellent service. Everything was first class. The food was delicious. I got the scallops and they were delicious.
