                                                                                                                                      Reservation was right when it opened for the evening which helped in having a quiet atmosphere. The host was friendly upon entering. The server was charming and described some menu options in fuller details and accommodated the requests we had for a side dish. My husband started with the chop salad and then had the ribeye with Cajun spice and au jus sauce. I had the Caesar salad with anchovies and then the salmon, with a smaller portion side of sautéed spinach with olive oil and garlic. We shared a side of a baked potato with the accouterments on the side. My husband enjoyed the steak and said he’d want to come back and have it again, but dry a different seasoning since it was a little too potent. The salmon was cooked to perfection and the sauce was tasty, added with the sweetness of the orange marmalade and leeks. The spinach was the best I’ve ever had. Would order the regular size portion next time because it was so flavorful. Passed on having dessert because we were so full from all of the goodness. The prices of some of the menu items may be expensive, but they are definitely worth it in the quality you get. Would absolutely come back here again.

Just make sure to ask the server about “garnishes” as one of our meals had unadvertised cilantro and I am allergic. Overall value was good as well.

The Wagyu and the garlic butter tenderloin we cooked to perfection. Excellent service with clear details. Deserts were outstanding. Would highly recommend for any special occasion or date night.

                                                                                                                                      Republic Chophouse was a perfect dining experience in every respect except for the steak. We had two $61 cowboy rib-eyes that were filled with fat, gristle, and were cooked imperfectly. I ordered mine rare with char, and my guest ordered hers medium rare. Both came came out only slightly pink in the middle, and with no char on mine. Every other item we ordered was excellent (mushrooms, muscles, salads, creamed spinach. Drinks and bartenders were excellent. Table service was excellent. But the main show - the steak - was a sub-standard piece of meat, was way over cooked, and would be substandard in any venue, or at home.

Service was perfect - attentive but not obnoxious. Food was very, very good. They even helped us celebrate my spouse’s birthday! It’s expensive, but it was fantastic!!
