Executive Chef Jon Simoneau has developed a menu that features fresh, sustainable raised Colorado beef for quality steak selections and a range of New American dishes that can be enjoyed. We also have a full cocktail bar and carefully curated an extensive selection of wines that is approachable and newcomers and connoisseurs alike.

We are located adjacent to Union Station on the corner of 15th & Wynkoop. Our focus is on consistently good food without the frills and fuss of haute cuisine but delivering on 5-star service.

I enjoyed the Velvet Cellar Happy Hour on a Friday afternoon. The Moscow Mules (2) hit the spot, along with the Salt & Vinegar fries and the street tacos (Chicken Tinga and Steak Al Pastor). By the time I left, a good size crowd had gathered to enjoy the happy hour offerings. This was my first time enjoying the VC Happy Hour, but my wife and I have enjoyed their regular dinner menu, along with attending a wine dinner and a Bourbon pairing dinner. I have enjoyed the Velvet Cellar since they opened. The food is well prepared, the service is great, the cocktails have a unique twist (try the Queen of Hearts), and the price won't break the bank.

Good = Very cool hip building, great layout, nice staff, excellent menu with many GF or GFO options. Bad = a bit on the pricey side for the quality of food I personally experienced. To be clear, three of our four diners really liked their meals, but I was a bit underwhelmed by mine. HOWEVER, I am VERY pleased that the restaurant owner took this feedback seriously and I got a very nice note that 1) my experience was not what they expect and they will look into some adjustments and 2) they are planning to upgrade some kitchen facilities soon to improve the quality and consistency of the food. I am optimistic this place will continue to improve and is definitely worth checking out. Close proximity to Ball Arena makes it a great pre-game or pre-show dinner if you want something a bit nicer.

Really great dinner on a Saturday night. From hostess to server everyone was very nice and easygoing and the food was amazing. Moved to Colorado a few months ago from Dallas and this has been my favorite restaurant we’ve tried so far, highly recommend!

Server was great, but the food took a very long time to come out. Drinks at the bar were good, as was wine at the table. Food was tasty when it arrived. Overall experience was good.

Family dinner of eleven during the holidays. Courtney took good care of us all night and food was terrific. Highly recommend!

Happy hour food and drinks were terrific! Our bartender/waiter (unusual name we can't remember) was a great host, he even tried to create a drink on my wife's suggestion.
